Ingredients

  • 34 lb boneless pork shoulder (pork butt)
  • 1 yellow onion (diced)
  • 4 cloves garlic (minced)
  • 2 tbsp paprika
  • 1 tbsp brown sugar
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp cayenne pepper (optional)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup BBQ sauce (your favorite brand)
  • 12 slider buns

Instructions

  1. Prepare the Pork: Trim excess fat from the pork shoulder. In a small bowl, mix together paprika, brown sugar, chili powder, cumin, garlic powder, onion powder, cayenne pepper (if using), salt, and pepper.
  2. Rub the Pork: Generously rub the spice mixture all over the pork shoulder, ensuring it’s evenly coated.
  3. Sear the Pork (Optional): In a large skillet, sear the pork on all sides over medium-high heat until browned. This step enhances flavor.

  6. Instant Pot Method: Place the diced onion and minced garlic in the Instant Pot. Place the seasoned pork shoulder on top. Add 1 cup of water or broth.
  7. Instant Pot Pressure Cook: Secure the lid and cook on high pressure for 60-75 minutes, followed by a natural pressure release for 15 minutes.
  8. Shred the Pork: Once the pork is cooked, remove it from the slow cooker or Instant Pot and shred it using two forks. Discard any large pieces of fat.
  9. Combine and Simmer: Return the shredded pork to the slow cooker or Instant Pot and stir in your favorite BBQ sauce. Simmer on low for 15-20 minutes to allow the flavors to meld.
  10. Assemble the Sliders: Pile the BBQ pulled pork onto slider buns.
