Description
This Mediterranean Chicken Stir Fry is a quick and healthy weeknight meal. It features tender chicken, vibrant vegetables, and classic Mediterranean flavors. The dish is easily customizable, allowing you to use your favorite vegetables or what you have on hand. Baked Chicken Drumsticks don’t have anything on this!
Ingredients
- 1.5 lbs boneless, skinless chicken breast, cut into bite-sized pieces
- 2–3 tbsp extra virgin olive oil
- 1 red bell pepper, sliced
- 1 red onion, thinly sliced
- 1 medium zucchini, sliced or diced
- 1 cup cherry tomatoes, halved
- 1/2 cup Kalamata olives, pitted and halved
- 1/4 cup crumbled feta cheese
- 2 cloves garlic, minced
- 1 tbsp dried oregano
- 1 tsp dried basil
- 1/2 tsp red pepper flakes (optional)
- Salt and pepper to taste
- 1 lemon, juiced
Instructions
- Heat olive oil in a large skillet or wok over medium-high heat.
- Add chicken and cook until browned and cooked through, about 5-7 minutes. Season with salt and pepper.
- Add red onion and bell pepper to the skillet and cook for 3-5 minutes, until slightly softened.
- Add zucchini and cherry tomatoes and cook for another 3-5 minutes, until vegetables are tender-crisp.
- Stir in minced garlic, oregano, basil, and red pepper flakes (if using). Cook for 1 minute more, until fragrant.
- Add Kalamata olives and stir to combine.
- Remove from heat and stir in feta cheese and lemon juice.
- Serve immediately.
