Ingredients
- 1 pound ground beef (80/20 blend)
- 4 tablespoons BBQ sauce
- 4 brioche buns
- 4 slices cheddar cheese
- 4 slices bacon, cooked (optional)
- 1/4 red onion, thinly sliced
- 1/4 cup dill pickles
- Salt and pepper to taste
- 2 tablespoons butter
Instructions
- Divide the ground beef into 4 equal portions (about 4 ounces each). Gently form each portion into a ball.
- Heat a large cast-iron skillet or griddle over medium-high heat until very hot.
- Place the beef balls onto the hot skillet. Immediately smash each ball down flat with a sturdy spatula, creating a thin patty.
- Season with salt and pepper. Cook for 2-3 minutes, until a crispy crust forms on the bottom.
- Flip the burgers and cook for another 1-2 minutes for medium doneness. Top each patty with a slice of cheddar cheese and allow it to melt.
- While the cheese melts, spread butter on the cut sides of the brioche buns and toast them in the skillet until golden brown.
- Remove the burgers from the skillet and place them on the toasted buns.
- Top each burger with BBQ sauce, bacon (if using), red onion, and pickles. Serve immediately.
