Ingredients

  • 1 pound ground beef (80/20 blend)
  • 4 tablespoons BBQ sauce
  • 4 brioche buns
  • 4 slices cheddar cheese
  • 4 slices bacon, cooked (optional)
  • 1/4 red onion, thinly sliced
  • 1/4 cup dill pickles
  • Salt and pepper to taste
  • 2 tablespoons butter

Instructions

  1. Divide the ground beef into 4 equal portions (about 4 ounces each). Gently form each portion into a ball.
  2. Heat a large cast-iron skillet or griddle over medium-high heat until very hot.
  3. Place the beef balls onto the hot skillet. Immediately smash each ball down flat with a sturdy spatula, creating a thin patty.
  4. Season with salt and pepper. Cook for 2-3 minutes, until a crispy crust forms on the bottom.
  5. Flip the burgers and cook for another 1-2 minutes for medium doneness. Top each patty with a slice of cheddar cheese and allow it to melt.
  6. While the cheese melts, spread butter on the cut sides of the brioche buns and toast them in the skillet until golden brown.
  7. Remove the burgers from the skillet and place them on the toasted buns.
  8. Top each burger with BBQ sauce, bacon (if using), red onion, and pickles. Serve immediately.
