Ingredients

  • 12 jalapeños (medium size)
  • 8 ounces cream cheese (full-fat, softened)
  • 1 cup cheddar cheese (sharp, shredded)
  • 12 slices bacon (thick-cut)

Instructions

  1. Prep the Jalapeños: Preheat oven to 400°F (200°C). Slice jalapeños lengthwise and remove seeds and membranes. Pat dry with paper towels.
  2. Prepare the Filling: In a bowl, mix softened cream cheese and cheddar cheese until well combined.
  3. Stuff the Jalapeños: Fill each jalapeño half with the cream cheese mixture.
  4. Wrap with Bacon: Wrap each stuffed jalapeño half with a slice of bacon, securing with a toothpick if needed.
  5. Arrange on Baking Sheet: Place the bacon-wrapped jalapeños on a baking sheet lined with parchment paper.
  6. Bake: Bake for 25-30 minutes at 400°F (200°C), or until the bacon is crispy and the cheese is melted and bubbly.
  7. Check Doneness: Ensure bacon is fully cooked and crispy and the filling is heated through.
  8. Cool Slightly: Let cool for a few minutes before serving.
  9. Serve: Serve warm and enjoy! Remove toothpicks before serving.

Notes

  • For a spicier kick, leave some of the jalapeño seeds in.
  • If you don’t have cheddar cheese, Monterey Jack or Colby Jack can be substituted.
  • These can be prepared ahead of time. Assemble and store in the refrigerator for up to 24 hours before baking.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat in the oven at 350°F (175°C) for 10-15 minutes, or until heated through, or microwave for about 30-60 seconds.
  • Serve with ranch dressing or sour cream for dipping.
